Michael and I have had the first two weeks of July off, and we spent a couple of our vacation days camping in Kananaskis with our friends, Evan and Melissa, who are moving to Thailand next month. Everything tastes better outside, but I think these gluten-free coconut lemon bars, which we enjoyed both evenings of our camping trip, would be amazing just about anywhere.
These are definitely coconut-lemon bars, not lemon-coconut bars – they are much more “coconuty” than lemony. Next time I might try doubling the lemon topping, or maybe even switching it up for lime! As they are, they pair beautifully with earl grey tea, a campfire, and friends.
